One little thing we did to celebrate finishing my three years as co-clerk of FMW was to have my co-clerk Elaine Wilson and her husband Brad over for dinner. It was a great excuse to break out our tequila cured salmon recipe that we haven't made since the days when we were actually able to throw our Christmas party. It was a lovely meal and a great chance to hang out with Elaine and not have to worry about clerking!
